Getting Saucy
It's that day again... #MeatlessMonday and I have something delicious in store for all of you. We are going to get saucy with just 3 ingredients!!!! Thats right three ingredients and about 20 minutes of your time.
Often clients and friends say to me, "you make it sound so easy, but cooking is so hard", well guess what I am not lying when I make it sound easy. I make it easy because I let the ingredients in the dishes shine as opposed to overwhelming and overworking them.
I for one know that we all struggle with preparing meals because let's face it who has the time. It is easy to leave work, go to the gym and just swipe an app and order a meal on your way home, the problem is you don't really know what you are eating. It is important to me to teach people how to prepare quick, simple yet delicious meals and sides that can be made in advanced and used in many ways.
So now lets get down to this recipe. As I said it is a 3 ingredient sauce that can be used in many ways, and it pretty much cooks its self.
Serving Size - 4
Ingredients:
1 pint cherry tomatoes, halved
1 shallot, diced
1 clove garlic, diced
1 T olive oil
Instructions:
Place a sauté pan over medium heat and add 1 T olive oil. Once hot add garlic and shallots and sauté until fragrant, about 3 minutes, then add cherry tomatoes, reduce heat and let cook until tomatoes burst, about 15 minutes, stirring occasionally.
There you have it folks, thats it! Big flavors, little work. You can also add some capers in at the end, or on a #MeatlessMonday add in some feta cheese for some extra protein.
The best part of this sauce is you can use it anyway you want. Mix it with some zucchini linguine, short on time? Boil some quinoa pasta while the sauce simmers and you have a delicious protein packed meal. Want to get creative top a piece of fish with the sauce, or toss it with some roasted vegetables.
