Grilled Okra with Lemon-Herb Aioli
Okra is one of those vegetables many of us wonder what to do with. Of course it is great in a gumbo or stew, but how about in its natural form?
This recipe is great way to showcase the food and enjoy the natural flavors with an extra kick. Try these out for appetizers at your next group gathering, an afternoon snack or as a side dish at dinner.
Ingredients:
Okra
1 lb. okra, cleaned
1 T Extra Virgin Olive Oil
1/2 t salt
1/4 t pepper
Lemon-Herb Aioli
2 cups good mayonnaise
¼ cup capers
1 large garlic clove, roughly chopped
½ cup roughly chopped parsley leaves
¼ cup packed basil leaves
¼ cup roughly chopped chives
¼ cup roughly chopped dill
2 teaspoons lemon zest
1 tablespoon lemon juice
¼ teaspoon pepper
Instructions:
Place a grill pan over high heat.Trim and clean okra and toss in a bowl with oil salt and pepper until evenly coated and then place okra on the pan. Grill on each side until grill marks appear, about 3 minutes on each side.
While the okra cooks, place all if the ingredients for the aioli together in a blender and process until smooth. Aioli can be made a day in advance. Cover and refrigerate until ready to use.
Once the okra is cooked place on skewers for serving and enjoy with aioli.
