Heirloom Tomato Soup
Well folks, we have officially made it out of the Polar Vortex and reached the amazing month of June!!! What is better than warm long summer days, trips to the beach and splashing in a pool? Summer foods, thats what!
While I love my parsnips and Brussels sprouts I am happy to leave them behind for some watermelon, peaches, asparagus and tomatoes!!!!
Today I am going to share with you one of my favorite recipes for Heirloom Tomato Soup. It is delicious and simple to cook! Can't ask for something better than that.
Let's jump in...
Serving Size - 4 large bowls, or 8 smaller servings
Ingredients:
3.5 pounds heirloom tomatoes, chopped
4 shallots, chopped
4 garlic cloves, chopped
2 T Extra Virgin Olive Oil
1 t oregano
1 t basil
1 t parsley
½ t salt
fresh ground pepper
fresh basil, julienned for topping
½ cup feta or goat cheese for topping
Instructions:
Place a large pot on the stove over medium-high heat add oil. Once warm add shallots and garlic and sauté until fragrant, about 2 minutes. Add tomatoes to the pot and remaining seasoning. Stir all of the ingredients and cover pot and let simmer for 20-30 minutes until tomatoes break down.
Once tomatoes break down, let cool slightly and pour into vitamix or blender and blend until well mixed and garlic and shallots are broken down.
Serve in a bowl or mug topped with cheese and basil, or place the cheese at the bottom of the bowl so it melts into the soup as you pour.
