Raw Creamy Corn Soup

Seriously, I love corn. It is such a sweet versatile vegetable great raw in salads, sautéed as a side dish, eaten right off the cob after some time on the grill or enjoyed in a soup there is really no wrong way to enjoy this vegetable. First thought, lets get some corn facts.

Corn has gotten a wrap as a "sugary and starchy" vegetable that we should "stay away from" well I don't know about you but I am not about to give up bananas which have two-three times the amount of sugar as corn and are considered a starchy fruit; especially when corn is full of insoluble fiber.

About that, corn we tend to think is hard to digest but the truth is that itis an insoluble fiber which is a good thing so while you may see it in your stool just know that it provides to a healthy gut and feeds the good bacteria along your digestive tract.

In addition to feeding the gut good bacteria, corn is filled with vitamins and nutrients that are known to aid in eye health.

So it is settled, corn is indeed a healthy vegetable to include in a well rounded diet! Now for a delicious recipe to try out this HOT weekend!

Raw Creamy Corn Soup

Serves 2

Ingredients:

  • 3 ears corn, kernels removed from husk

  • 1/2 cup almond milk (or non-dairy milk of choice)

  • 1/2 avocado

  • 1/4 cup loosely packed mint leaves

  • salt and pepper to taste

Instructions:

In a high speed blender add the corn and blend until chopped well, next add in the almond milk, avocado and mint leaves and blend until smooth. Season with salt and pepper.Pour soup into two bowls top each with a mint leaf, a few corn kernels and serve.

*Feel free to add more milk while blending for a smoother texture if desired.

That’s it! What is better than a 4 ingredient meal that can be made and cleaned up within 10 minutes? Not much!!!!
