Miso Leek Soup
As you already know I like to create simple quick dishes with just a few ingredients that one may have on hand. Today's soup is no different; I always have miso in my fridge, if you don't get some it is great to have around for soups, sauces and marinades not to mention it has some major health benefits.
Zucchini Linguine with Clam Sauce
Much of the food I make is inspired by the unhealthy versions of food that I enjoy, because lets face it, there is no use in fighting cravings (they often come back with a vengeance) instead why not turn your unhealthy craving into something healthy that you will not feel guilty about enjoying (and you won't need to unbutton your pants either).
Creamy Miso Carrot Soup
Enjoy this soup regularly and you won’t be saying, “What’s up Doc”. This recipe restores you both inside and out, while the vitamin A from the carrots promotes amazing skin, the miso works to restore beneficial probiotics, and that is not even the half of it!
Roasted Carrots with Truffle Oil and Feta Cheese
There is an abundance of carrots at the Farmer's Market and let me be the first to tell you that I am more then ok with that. Carrots are amazing! Great raw with some dip, try out this Spinach Avocado Dip or Mint Basil Sweet Pea Dip, they are also great in soups (recipe coming soon) and my most favorite, roasted.
Crunchy Thai Salad
From the crunch vegetables to the peanut buttery sauce this is sure to be a hit in your house. Just be sure to make enough for leftovers, trust me you will want them.
Shrimp "Fried Rice"
For the last few months since removing meat from my diet when I have a cheat day craving it tends to always be for Shrimp Fried Rice. While I have indulged on numerous occasions I decided it was time to make my cheat day food into an any day meal.
Baked Eggs
I decided not to do a major food shop and prep this week since I will be heading out of town for a long weekend, yay for the beach and a little pre birthday celebration! So instead I have been grabbing things here and there and using anything I had in the fridge. To be honest this is really my favorite way to cook.
