Hint of Greens Salad
The key to salads is not to over complicate them. Go with a few flavors that all balance each other, no need to put everything you like into one salad, then it just becomes overwhelming.
Check out this recipe for one of my favorite salads.
Hint of Greens Salad
Ingredients:
Salad
1 cup Power Greens (baby kale, baby chard, baby spinach)
1/3 cup diced cucumber
1/4 avocado, diced
1 stalk hearts of palm, sliced
1 T dried cranberries
Dressing
1 raw egg yolk
1/3 cup balsamic vinegar
3 T extra virgin olive oil
1 T water
Instructions:
In a mason jar or similar sealed glass jar place dressing ingredients, cover shake well and refrigerate. Place salad ingredients into a bowl, toss with 2-3 T dressing and serve.
Remaining dressing can stay refrigerated for three days.
Turn this into dinner by by adding a piece of grilled salmon or chicken! A truly delicious meal.
