Mediterranean Chopped Salad

So here we are the first official Meatless Monday on the new and improved Hint of Greens website... it feels so good! Fresh, vibrant and full of life!!!!

What better way to celebrate than with a dish that incorporate the same things!!!!

This salad is a personal favorite of mine as well as my mothers, whenever I come over she has the ingredients handy just so we can enjoy it together, she says she likes it when I make it for her best, and after all of the years of her cooking for me I am only happy to oblige.

So in honor of Meatless Monday, here is my Mediterranean Chopped Salad for you to enjoy.

Mediterranean Chopped Salad

Serving Size – 4

Ingredients:

  • 1 pint grape tomatoes, halved

  • 1 green bell pepper, diced

  • 3 persian cucumbers, diced

  • 2 T chopped scallions

  • 2 T coarsely chopped fresh parsley

  • 2 T coarsely chopped dill

  • 1 t extra virgin olive oil

  • 1 T white or red wine vinegar

  • Salt and pepper to taste

  • 2 ounces feta cheese

Instructions:

Combine tomatoes, bell pepper, scallions, parsley, dill, oil, vinegar, salt and pepper in a medium bowl; toss gently to mix.

How easy was that? Fresh herbs go a long way in this dish, they truly are the star, just like you will be when you share this recipe with your friends and family!
