Oats for Dinner?!?!?
While spending some time at home this weekend I was craving something saucy and cheesy, we have all been there! Next time you are feeling this way skip the pizza or pasta and head straight to your kitchen and grab your breakfast oats.
Try this amazingly tasty, quick cooking savory oats recipe. The best part is, you can use whatever you have on hand at home and you will have a delicious meal in no time.
Serving Size - 2
Ingredients:
2 T oil (I used some truffle oil I had on hand)
1 shallot, diced
1 garlic clove, diced
1/2 cup mushrooms, thinly sliced
1 1/2 cup cherry tomatoes, halved
1 cup spinach
1 cup oats
2 cup water
1/4 cup cheese, cubed
salt and pepper (to taste)
Instructions:
Heat 1 Tsp oil in a pan over medium high heat, next add the shallots and garlic and sauté until fragrant, about 2 minutes. Add in the mushrooms and allow to soften for two minutes and then add the tomatoes. Let the tomatoes begin to burst and release the natural juices, about 5 minutes, while stirring, once they start to soften and release most of the liquid add the spinach and sauté another 2 minutes.
Be sure to season the vegetables as desired and then add the oats to the pan, mix them in with the vegetables and then add the water, slowly and continue to stir until the water is absorbed.
Finally, top the dish with the cheese and fold into the oats to allow it to melt. Place in two bowls, drizzle with remaining oil season as needed with salt and pepper and serve.
