Watermelon Cooler

This drink is the essence of summer in a glass. What is better than some juicy watermelon in the summer? Not much if you ask me... well that was until I threw some in the blender and added some mint!!!

This recipe is a sneak peak of what’s to come with my summer detox program launching in July, but before we get to the recipe let’s get the facts on this thirst quenching fruit.

A full cup of watermelon contains only 46 calories, and contains plenty of vitamins A and C as well as minerals and nutrients said to help fight inflammation which contributes to conditions such as asthma, diabetes, colon cancer and arthritis. Watermelon is also a source of the potent carotenoid antioxidant, lycopene. These powerful antioxidants travel through the body neutralizing free radicals.

Now about the sugar,the glycemic index of watermelon is between 72 and 80. Typically values above 55 are considered high, but in the case of the watermelon it has a low glycemic load which is a better measure of a food’s effect on blood sugar. This is due to the high amount of water in watermelon. The fruit is over 90 percent water, and since water is calorie free but filling, you are likely to become satisfied from a meal containing watermelon before you ingest too much sugar to pose health risks.

Watermelon’s numerous health benefits are reasons to enjoy this deliciously sweet summer fruit and sugar should not have you staying away.

Watermelon Cooler

Servings - 2

Ingredients:

  • 4 cups watermelon, cubed

  • 1 cup ice

  • ¼ cup mint (or 1 teaspoon peppermint extract, or 1 drop peppermint oil)

Instructions:

Place all ingredients in blender and blend until smooth. Enjoy as a drink or freeze in a Popsicle mold.
