Watermelon, Lime, and Mint Ice Pops
Word around the internet is today is National Watermelon Day! There seems to be an abundance of national food days recently and this is one I can definitely get behind, especially since I always have watermelon on hand during the summer!
I have mentioned in the past about watermelons health benefits and shared some recipes for a cooler cocktail and salads, but in honor of the summer heat today we are talking ice pops!!!
What better snack on a hot summer day or night then some fresh watermelon kicked up a notch!
Ingredients:
4 cups watermelon, cubed
1 lime, juiced
1 T honey (optional)
1 drop dotetta peppermint oil
1/4 cup mint leaves, loosely packed and chopped
Instructions:
Place watermelon, lime juice and optional honey and oil n blender and blend until fully processed and smooth, Next add the chopped mint and give the blender one last pulse to mix evenly.
Pour watermelon mixture into popsicle molds and freeze 4-5 hours or overnight and enjoy!!!
