Steamers with Corn and a side of Kerber's Farm

I love shellfish, and every summer there is nothing I love more then sharing a bucket of steamers with my mom, it is something I remember doing every summer since I was young.

This year instead of going out for them we decided to head over to the local fish store and purchase some steamers. Earlier in the day we grabbed some corn at Kerber's Farm, I had never been it was a fun surprise breakfast with my mom. Seriously this place is amazing if you ever find yourself in the Huntington, NY area be sure to go by. They have the most amazing breakfast sandwiches, fresh pies (large and minis), scones as well as lobster rolls and so much more. I can't wait to go back! We sat outside and enjoyed our breakfast alongside a chicken coup and a tractor. Thanks mom for knowing how much I would love this place!

Ok, back to the Steamers. We picked up steamers at what I think may be SpongeBob's house and headed home to make some dinner.

Steamers with Corn

Servings - 2

Ingredients:

  • 1 onion, sliced

  • 2 ears corn, 1 shucked - cut into 3rd's

  • water

  • salt and pepper

  • 1 1/2 lb steamers

Instructions:

Fill pot with 4 cups of water. Add corn and onion and let boil and then bring to a simmer. Season with salt and pepper.

Once the corn is cooked and the onions are fragrant remove the corn and husks and add the steamers. Let the steamers cook until opened about 3-5 minutes. Add the corn back to the pot. Once the steamers have opened transfer to a bowl and pour the broth into small bowls or mugs to dip the steamers in. Serve with corn.

Now, what to do with the corn you took off the cob? Add it to salads for a sweat crunch, or sauté it with some extra virgin olive oil and basil.

- Feel free to add more vegetables to the broth, tomatoes would be a great addition!

*Note - last weekend while at Goldie's Restaurant (ok another recommendation if you are in the Asbury Park, NJ area) I had Cabbage and Hominey soup which was amazing. I asked them what the broth was made from and they mentioned how they used corn husks to season the soup... so obviously we had to try it.

Ok, now go make yourself some steamers and while your sitting enjoying them make some plans to head to Kerber's and Goldie's.
