Slow Roasted Tomatoes

As you know I love tomatoes. I have shared recipes for soupssauces and now I share with you one of my favorite side dishes, Slow Roasted Tomatoes aka little bites of heaven.These tomatoes are great served as a side dish or as an appetizer. Make some extras to have with some eggs for breakfast.

While this recipe does take a while in the oven, it will only take you 15 minutes of prep time and then let the oven do the work.

Slow Roasted Tomatoes

Servings - 4 (4 halves per person)

Ingredients:

  • 1 tsp extra-virgin olive oil

  • 1/2 tsp salt

  • 1/2 tsp basil

  • 1/2 tsp oregano

  • 1/4 tsp freshly ground black pepper

  • 1 tsp coconut sugar (optional)

  • 4 pounds plum tomatoes, halved lengthwise (about 16 medium)

Instructions:

Preheat oven to 250°.Combine the first 6 ingredients in a large bowl. Arrange tomatoes, cut side up, on a baking sheet coated with cooking spray, with a brush or spoon top each tomato with some of the seasoned oil. Roast at 250° for 6 hours, or until you just cant wait any longer.

*Fun idea - top these tomatoes with a piece of mozzarella cheese to serve as an appetizer for your next event.
